This amazing Mexican single origin coffee is from Finca Agua San Isidro farm, and this micro-lot is from a total 0.5 hectare harvest. The single producer micro-lot is grown and produced organically.

Melitón Cruz Zaragoza, a man with a humble beginning and a passion for producing
specialty coffees, is behind managing the farm. At his farm, he concentrates on picking the
cherries in the morning from 8 to 11 a.m., then floats them, and afterward begins to pulp the coffee and ferment for more than 30 hours depending on the weather conditions.

The most interesting thing about this coffee, apart from the quality, is the drying time. Drying is
what defines Melitón. The coffee is dried on drying beds inside a stone house with a tile roof, so it is a slow drying process of more than 20 days. He is the only person who performs this process and with this infrastructure. Melitón, is known for unmatched coffee quality.
